I have been so busy and stressed out for the past several weeks that I have had little time to create blog posts. I did make time to post about my 1/2 birthday celebration and my other milestones, but I neglected to post about Jack's birthday at the end of January and also about Bob's birthday at the end of February. Sorry Guys. You know how busy I have been dealing long distance with my Dad's issues. I know you understand.

Anyway, in this post I will catch up by showing you some photos from both men's birthday celebrations. We all had a fun time, ate too much cake and ice cream and laughed a lot.

This was a good moist carrot cake...Mmmm....

Along with the cake we had Jack's favorite Natural Vanilla ice cream from Breyer's. No ice cream photos though.

Now Bob's birthday is really Leap Day, but we celebrated it on February 28th this year. Bob requested either a carrot cake or a chocolate cake with chocolate frosting for his birthday cake this year. I decided to experiment and give him a little of both.

He got a chocolate cream cheese frosted carrot cake!

Jack supplied Bob's requested ice cream: Rocky Road. Again, no ice cream photos.

Chocolate Covered Carrot Birthday Cake...moist and delicious

I think I prefer the lemon vanilla cream cheese frosting on my carrot cake, but the chocolate cream cheese frosting was very good too. I think the white frosting looks better on the carrot cake, provides more contrast in colors. Both cakes were devoured very quickly.

I think I would tend to agree with you and the chocolate frosting on the carrot cake, however like you said, there is no cake left over so we both know it was delicious.

You and your buddies really know how to have fun, and I can feel the love between you!

I hope your issues with your dad can be resolved with peace in your heart.

Oh my...I'm going to start calling you PARTY GIRL! Your lemon vanilla cream cheese frosting sounds amazing. My mouth started to water and it's only 8:30 in the morning! How about posting your recipe for that? :-)
I'm sorry to read that your incredible unhappy stress continues...and I'm thankful that you have some good people in your life to help you manage it.

I never partied this much when I was a teenager. We do have a lot of fun times together.

The chocolate, cream cheese frosting was beyond scrumptious. I just love chocolate, and the creamy frosting melted like sweet butter in my mouth. Farmer Jen's carrot cake, well, it was simply incredible. The many presents and balloons were very cool too. ♥♥

Hopefully, our family will keep having a lot of fun together to scare the stress away for Jen.

Thank you for noticing my artsy walnut butterflies. I thought they were cute.

Hi Danni,
I got the basic cream cheese frosting recipe from my Betty Crocker "big red" cookbook. I substitute fresh squeezed lemon juice for the milk in the frosting. Maybe I will include the recipe in a future post.

Yes, the stress continues and will for awhile. I am grateful for my great support system. It really does help to know that others care. Thank you for being one of them.

I am glad you enjoyed the chocolate frosting. I thought it was pretty good too. I just think the carrot cake is a little better with the lemon frosting and the white color contrasting with the orange tones of the cake.

The lemon cream cheese frosting looks so good. I'd eat an entire bowl of just that and be happy as a pig! lol!
